Regarding Hidden Enemies
The game for the most part feels fair, but it feels like with certain encounters as certain counters they're borderline impossible. My main issue is that hidden enemies can enter combat WITH Fury, which can create some no-win scenarios for some classes with less efficient defensive options. I understand that the game isn't exactly made to be fair but it's ridiculous that hidden enemies are allowed to create scenarios where, even if you did nothing wrong, you can still lose.

On my way to defeat the Beast King as rogue I saved all the defensive cards I could because I saw that the bush and fairy left over weren't disappearing. From the woodwork came THREE Forest Lions and it was impossible for me not to die, even after making the right call of cycling for defensive cards.

Right now the only way to avoid circumstances like that where the game forces you to take the L is to take inferior items like the Fairy Mask that don't offer you as much benefit or support a build you're going for, but will eliminate the chance of you losing instantly to hidden enemies.

My suggestions are to either make it so Hidden enemies enter combat either without attacking unless they're 'Charge' creatures, or enter combat without Fury so they can only attack once when they're revealed.
The other idea is to just make it so 'Reveal Hidden Enemies' items are more desireable and worth taking, because right now they only exist to stop you from instantly losing to something out of your control.

Yes.
I mentioned this 2 in other topic.
Another is 5 charging enemies on turn start before forest final boss.
Is really hard to have 5 def cards on turn start.

Next is hidden enemies, sometimes we get 5 or more enemies appear from hidden.
Even if you keep 5 def cards on hand, you might not have stamina to use unless you are fighter.

Game is good and great. Only require minor tweaking to reduce annoyance

It is a fair point. While rooms many times have more than 2 hidden enemies I have always balanced them so that further hidden enemies will only spawn if the player gets too cocky and kills too many enemies in the first turn. This can be seen clearly in the dragons lair, where while you have many many powerful hidden enemies in some rooms (sometimes as many as 6) the player can learn to exploit the enemy cap of 8 character per screen to their benefit.
That works for the most part in my opinion, however, there is one exception. One room in the beasts trail that actually spawns 3 hidden lions even if you dont do anything. After giving it some thought and trying the room with a few different builds I agree with you that it is too difficult. Some pretty good builds are actually defenseless in that situation. So for now I will change the room (and check other similar rooms) to make sure those situations don´t happen any more.
Thanks for your feedback! :)

Ah, thank you for listening! Yeah that's one of the few rooms where I really felt like I was being punished despite playing well. In hindsight I didn't feel frustrated with the system too many other times.
