You can also unlock young versions of the characters through the new challenge mode and skygates. You can select them by pressing a button (I think Y or X? Don't have my game open right now) while having the old hero selected and it should swap to the young version.
Be aware that opening the final hell chest for young characters doesn't do anything; Hell chest is for Old characters. Skygates are for Young characters. You can bring young characters to the Hell chest but make sure you have an old character with them that you want to open the chest with.
I recommend unlocking at least to the 3rd Crux variant, as you need him to do one of the challenges and you can't start doing skygates until you have all challenges done.
The pie at the end is mostly a completion badge, its not really 'for' anything besides being a visual representation of your progress.
