To be fair, i still get damage by walking over objects every now and then, but yeah those instagibs and getting ragdolled into the air only happen at higher than advised numbers.

This happened because i climbed my horse while an ice troll hit it. It's claws actually have some ice attack imbued in them. When you climb or dismount your horse, the animation is rather wonky and can be abused in speedruns. This time, the claw attack got stuck on my horse and propelled me into the air at a slight diagonal projection into the air.
Skyrim bugs are the best.
Edit: You can even see the ice trail the claw buff leaves behind, if you look closely you should be able to see the claw in his hitbox.
By the way, for those curious. I did find out what was causing it. And it all makes sense...
it was a standing stone mod...
