The special edition comes with upgraded visuals and comes with the dlcs and anniversary edition comes with lots of new content including weapons and armour from morrowind and oblivion.

It honestly depends on what kind of mods you want. Back in 2021, Bethesda added four Creation Club mods to the game: "Fishing", "Survival", " Rare Curios", and "Saints and Seducers". Those four mods are part of the game now. Fishing allows you to fish, Survival adds in a new Survival Mode, Rare Curios adds in a BUNCH of new items, mainly alchemy ingredients, and Saint & Seducers adds in a new quest-line, along with the ability to craft new equipment.

If those four mods are enough for you, then stick with them. Otherwise, research what the Anniversary Edition actually is, and then make a decision based on that.
Special edition is Skyrim with updated graphics, on 64 bit and with 4 free creation club mods now added to the base game.

The anniversary edition dlc is 70 creation club mods in one package added to the game. They all add in various quests and items and such, many things that go back to the older games. Like there's a quest that has you go into an oblivion gate, and one where you can get the knights of the nine crusader armor.

Do know, AE content is highly unbalanced and are no more than paid mods. Buy it if you want it but be aware it might ruin your entire experience.

thank you guys! I will follow your advice!
cheers

edit: I will stay with the SE and skip AE for now

I used "Skyrim Script Extender" in the old version
Mainly because of the UI mod that makes it more PC friendly interface
Is that still a thing or are there any mods that are considered "must have"?
I have not yet updated my NNM or checked nexus... But will do maybe?
