can defeat some of them easily at level 20, and some with a hard fight at level 40..... depends on which one, assuming you mean the ones with the masks.
During the Dawnguard quest you save him (Dexion Evicus). Just injure him enough to snap him out of it.
Having not been able to defeat them OP might not know that they don't die. Also saving him is only really on the Dawnguard side, if you're a vampire you enslave him as a thrall.
You don't have a choice, Serana cannot be dismissed until the quest-line is done.
Sneak is an incredibly useful skill and you don't even need that many perk points invested. Just enough to gain an attack multi when using a bow or dagger and to get by some of the more troublesome npc if you want to get into or out of an area without a fight. All classes can use it. There is a reason the stealth bow combo is so powerful. If you use the ordinator and apocalypse mods then you can even get sneak damage on destruction spells. Thats a fairly neat thing that makes a stealthy destruction mage quite appealing when typically you have to augment them with secondary skills to make the potions and enchantments to make destruction worthwhile.
