Waiter in guests for dinner quest

In my new playthrough, I am doing the quest "guests for dinner". The waiter can somehow kill my level 18 dragonborn in 3 to 4 hits. My character is quite powerful, with ebony armor with enchants. I changed the difficulty to novice, and my character is still dying. Any advice?

Level up more (I was over level 35(may have been over 55)), carry a lot of potions, and kill the waiter first (target the harder enemies before the weakeras they will kill you quicker)

That waiter is a level 65 character. He is going to be tough. Though if you are playing as a vampire, the waiter will fight on your side. That is likely the intention anyway, seeing as how it is a vampire house. It is meant for vampire characters.
