If you’re open to mods, your options increase significantly.
All the CC houses have bugs that can cause items to disappear from racks and Plaques.... if they didn't then Hendrheim would probably be the best collector house. Tundra home is good too, even if the display area is in the cellar.
The Hearthfire Houses suffer the same bugs (which is were the CC houses get them from)
So that just leaves the original five houses.... I would say out of them the Windhelm House Hjerim is probably the best for displaying gear, with the Markarth house and Solitude house (Proudspire Manor..... even though it lacks a spire....) joint second.
the one in riften sewers is the one i use most. (shadowfoot sanctum as Rez mentioned). Has everything you could need, and you don't need to join the thieves guild to buy it, just talk to the tavern keep.
