"If you have already received the quest Boethiah's Calling and have the objective to kill her current champion, you will be unable to complete the quest Kill the Bandit Leader in Knifepoint Ridge. The quest marker will point to where the bandit chief stands instead of over his head, and even if you kill everyone in the mine, the quest will not be completed. Waiting until Knifepoint Ridge has reset does not fix the problem.
- This bug is fixed by version 2.0.1 of the Unofficial Skyrim Patch."
Or, as a very last resort, there is this console command - but you should preferably have the Unofficial Patch installed if you do not (though this will progress the quest should it be caused by something else):
"- First uncheck the quest tracker (in case of another bug), then type this command in the console: setstage Favor154 20. This will finish the quest, allowing you to turn it in to the Jarl; however, you won't get the gold reward."
Preferably, before you ever use a console command, you should try loading a previous save - since you say this is not possible, in the future, try to remember to make frequent manual saves - just in case you ever have to roll back (which hopefully, you never will have to).
As to that command, the uespwiki is considered a reliable source, so the command should be safe to use - but, as always, the console should only be used as a last resort, only if there is no other way to fix an issue, and only if the command is listed either in the uespwiki or suggested by a known reliable forum member (In the pinned topic Helpful Links and References, see Section 6, Miscellaneous - Reliable Forum Regulars, for a list and explanation).
As to use of the console, it does not disable achievements, though improper use of certain console commands may make it not possible to get a specific achievement. But, they do not disable achievements as a whole. (That message that is shown, is more a way of discouraging people from using the console improperly.)
Also, the patch I am referring to is the Unofficial Skyrim Special Edition Patch - https://www.nexusmods.com/skyrimspecialedition/mods/266
That is a mod that needs to be downloaded. it fixes literally thousands of bugs that were not taken care of by Bethesda. There are also another number of fixes that you should have. See this guide:

(from PINNED TOPIC Helpful Links and References, Section 1, General Information
It covers all the basics that you need and is actually quite simple to follow.
Congrats on getting that achievement, and enjoy!
