Skyrim is popular because it has no competition, the only games similar are Oblivion, morrowind and the might&magic series.
Mods keep it fresh, but it's the sheer lack of competition that's the main factor, Witcher isn't a competitor because it's not as free, BG3 isn't a compititor because of the limits on roaming around, etc...
Yeah. I need two followers to deal with dungeons around Whiterun. They are fine, if I am not being detected. If bandits detect me, I have to run behind Inigo's back and let him and third person (changes a lot) to take the first hits. Otherwise I am staring at reload window again.

Why is this game popular? Silly question.
Why is GTA5 still played? Large map, fun, Exploration, story etc..

If Gothic 3 didn't have such a bad engine it was far better than Oblivion but it's engine was even worse the Gamebryo (Bethesda's baste*edised version of it).
EDIT: Mods, mods make it.
I bought Standalone Dayz Back before pre-release. I just couldn't get into it. It's so slow then you come across a big player and sniped, dead.. It's a time sink that is a time waste. My opinion though, others may differ.
Skyrim just offers a good balance of realism, grit and powerfantasy in a very customizable package that it's easy to jump into in any case.
