My Skyrim started crashing last Friday without reason
I've added no new mods, all mods are up to date and all game files are verified, the game was running fine until then

So I'm adding a Trainwreck Crash Log Summary in case someone can make sense of it:

Okay, I went over the log one more time. Basically, it tells you that the rig is insufficient to run the game at whatever settings and with whichever mods you have. You've simply hit a performance ceiling. From there, you have three choices:

1. Upgrade your RAM to at least 32GB, pick the fastest RAM your laptop can handle, lower all video settings (especially view distance and AA), install low-res textures. It won't look pretty, but it should run.

2. Upgrade your laptop with an external GPU (if it is economically feasible, usually it is not).

3. Get a more powerful PC or laptop. This laptop is an office-tier one, not a gaming machine.

Wait, ALL the mods you're using are up-to-date? Ladies and gentlemen, I think we've found our answer! Whenever a mod updates, it can change the way it interacts with other mods. In turn, that can lead to changes in how your game behaves, including crashing. But without a full list of all the mods you're using, but current and past, we can't find the culprit or culprits without using the slow method.
CPU is to slow, also no GPU but an intergrated graphics and shared memory.

CPU is fine but if there is an open PCIe slot, even a used RTX 2080 for $50 would be huge but you may also need to up your PSU..

1. Basic CPU. Enough on its own, bit insufficient if used without a dedicated video card.
2. Just an onboard GPU. Any dedicated GPU would be an improvement, even some old 4GB VRAM-class card (1050Ti). I consider a 1060 (6GB VRAM) as the baseline.
3. Not enough RAM if used with an onboard GPU.

Beyond that, check if your mods are up-to-date, and see if all prerequisites are being met.

Where's OP gonna fit that. OP uses a laptop.

Laptop CPU: GenuineIntel 11th Gen Intel(R) Core(TM) i5-1145G7 @ 2.60GHz with a intergrated GPU #1: Intel(R) Iris(R) Xe Graphics.

They do make enclosures for external GPU. They're not great but they're better than iGPU.
The author of this thread has indicated that this post answers the original topic.
