So I'd personally go with the Dunmer from an immersion perspective.

As always, do your due dilligence, look for requirements and any possible conflicts with your load order, etc.
Yeah, I know. As much as I love Khajiits, they feel a little bit off as main characters in the game. Just can't have any idea how to make Dunmer unarmed from the RP perspective, especially from the noble house such as Hlaalu.
I had one idea before, to make a Breton monk who would use her magic to wreck the ♥♥♥♥ out of her enemies and then finish them off with her bare fists. But I always prefer to play as Dunmer. Old habits, I suppose.
Thanks! I'll check them out! I've also heard about the Ordinator mod, but I dunno about it. Is it really changing the game much?
Ordinator is one of my favorite mods. Adds a ton of crazy perks, including a few (under Light Armor) that spice up unarmed builds a bit. One gives your attacks elemental damage. Worth checking out imo.
I use Ordinator, and it is a notable change from the vanilla perk trees. I'd highly recommend looking into it especially if you feel like a number of vanilla perk trees & perks are just never worth taking. Just about every perk tree in Ordinator has enough interesting & useful things to make them worth investing in and focusing on beyond just roleplay reasons. The only downside I can think of to Ordinator, was initially being a bit overwhelmed by the perk diversity and not knowing what I wanted to do.
Even if decide to not go with Ordinator, look into the mod author's other mods a bit. They have a number of other ones for different aspects of the game such as races, spells and standing stones. There is also Vorkii which is a lighter perk overhaul than Ordinator.
On top of what have been already said Ordinator makes it so every skill tree can potentially be the only tree you ever use - every tree has both utility and combat usage.
It is like you have whole classes instead of skills (and of cource you can still "musticlass", but the potantial to be an battle alchemist or trap specialist or bard warrior that masters their thuum is there).
And RP wise I'd chose the dunmer, because there is supposedly a ban for them to enter the cities, and without mods to add shady entrances, you'll have to sneak through the front gates, if you RP the ban.
And no khajit marriage candidates too.
Without mods the dunmer marriage candidates are mostly aquired taste, if I put it gently, but at least they exist.
And I think Skyrim is a place where everyone will get into unarmed eventually. People are very punchable there.
So: just go for the coolest race (which means Khajiiti obviously) and do whatever you want to achieve your goals, they don't deserve anything but an anarchic cat playin with their things.
Yeah, I know. This is the reason why I'll go on a massive rampage, destroying the world when I'm done with the game.
