So far it sounds like combat is your issue. If you cannot find an appropriate mod, perhaps find a combat focused game to scratch that itch and play Skyrim for other reasons (adventure, RPG, etc.).
sadly it's all modular, and you have to pick and choose lots of things even your animation sets, to make a fully functioning setup, there's work involved, especially integrating these overhaul mods with your other mods, other weapons, etc. patch and patch and patch some more!
so if you like what you see, but don't like the technical side of using mods, know there are plenty of collections/wabbajacks where the work is done for you, based around MCO.
Mostly I don't focus on it at all but what I want to accomplish which is enjoy the game.
Its a mixture of Survival and Immersive elements (Frostfall,Campfire, Last Seed); Bathing In Skyrim or Keep it Clean. Immersive Animation type mods from anything to eating, sleeping, <Blank>ing.
For combat, I run Wildcat and Precision but its also addendumed with Better Vampire NPCs, Skyrim Immersive Creatures; which add variation and increased difficulty.
New areas to explore mods (Both in the vanilla area and some expanded lands (Hammets Dungeons 1 and 2, Land of Vomenheim, Beyond Skyrim: Bruma).
Little Flavour thing like quest changes, Expansions, more and varied voiced lines for both NPC Followers and Enemies. I even use a mod to slow my experience gain so I can pace my game better and longer.
I could go on, but thats the general idea.
I have over 12k hours in Skyrim LE and SE. I don't have plans to stop anytime soon. Also it's not the only game I play. I play other things. But Skyrim isn't ever leaving my Line up. Like literally, this build cannot be replicated. I back it up every 3 months or so because I manually mod and its a bag of chaos with those old style destroy the world type Djinn that will get out if I don't keep it contained.
If you're not enjoying the game as-is, this seems like a reasonable thing to try. You aren't losing anything by scrapping something you don't like.
im gonna try and play a bit more to see if it changes but i doubt it, will have to try the combat overhaul dude recommended someday

For me it is the chill factor in which you have an almost perfect sandbox where you don`t need to do anything, but you can do absolutely everything if you feel like it.
Most of us that have thousands of hours in it, are not just playing it as a game, but spent a lot of those hours on some rather laborious mod testing, identifying and fixing errors in search of perfection.
And when we do find it, we usually break it and does it all over again ... :]
The rp value is also high for many of us when we do play, both in the fantasy aspect and the adult themed escape which makes time fly by on character creating, world building, taking screenies and so on.
And of course the familiarity of the whole world that can feel like a safe haven to return to.

relationship and dating and random conversations etc, check LL site, it has a bunch of good relationship systems mods.
You have your expectation in regards to skyrim. either adjust the game until it meets them or go play something else I guess.
if vanilla game was actually good i woulnt need 288 mods to make it bearable for me, if it was, the only mods i would install was graphics and more content like missions and weapons like i did with new vegas
cant change outdated game design with mods
