I don't think there are many mods that require Anniversary Edition and Anniversary Edition it is a DLC for Skyrim Special Edition it is not a seperate game in case you didn't know this.

I'm talking about modlists, like Nolvus, for example, who gives you a new experience without having to go through downloading every mod one by one.

I don't use any myself, so I cannot say what exact performance you'll get or what you need, you'll just have to look for yourself. I do know that Nolvus does require the AE.
Somebody asked a question like this recently and I looked at "Gate to Sovngarde" That should run fine. The Author uses a 2070, better than what you have but they were running with the shaders, you can turn those off if they are too much.
