A lot of animation related mods tend to require a few mods to get them working. Usually your first step would be to get a skeleton mod so that the new animations will work properly. I suggest XP32, it is very versatile with different "bones" to be used for whatever the animations requires. But if you find a set of animations requiring a different skeleton always get what they ask you, however make sure to double check the posts section on nexus, it is possible XP32 would work and you may find an answer there. Then you'll probably need an animation loader, I suggest Pandora or FNIS, there's some rather good videos on YouTube on how to use them properly. As for graphics that's a bit harder, some graphics mods require you to go into the data files of Skyrim themselves and tweak things, but there are some really good videos on how to achieve this aswell. I don't know too much about mods that add the features you seek, regarding Dark Souls-like combat but I was searching on google one day and found a list on reddit that provided a huge list of animation related mods, things like your character actually bending down to loot a body, pick up something, harvest ingredients, pet a horse, (LOL), I'm pretty sure there were some that changed combat also. But one thing I will say, take it easy and try not to be overwhelmed, sometimes to get a certain mod working it takes a few other mods to add the systems that provide what your mods need for them to work. Just to get one mod working once took another 5 or 6 mods for me to install. Up to a bit ago I was running a game with over 100 mods, and I swear a quarter of them were just prerequisites just to get other mods working.
