What are some things to note about Alternate Armors?
If you do a quest for an armor, will it level with you?

Armors do not level up with. You can increase your armor rating with the proper ingot at a smithing table.

Is Stalhrim Fur Armor enchantable or is it like with my current armor the Iron Plate Armor where I can only attempt to enchant the chest slot?

All armor can be enchanted, but you can only put a single enchantment on them unless you got a perk that allows a second one. Certain enchantments are also limited to gear slots, for example a enchantment that boosts melee damage can only be put onto gauntlets.
