You can switch views at will from First to 3rd person. How enjoyable you find the game. I can't say. I find combat better in 1st. Interacting with crafting or riding a horse (or Dragon) will switch you to 3rd regardless.
Some enemies in my game can use Invisibility. I am always in third person mode, while melee... for reasons.
Define "old man".
I know what you mean. More often than not in a lot of games where you're forced to play in 1st person only, it's almost as thought you're running about as a dwarf. And a small one at that.
Luckily, Skyrim lets you play in both 1st person and/or 3rd person and while in 3rd person, using the mouse wheel will scroll you either further out, or right back into 1st person.
And as for the define bit. I'm 63. Retired due to illness but have a mind of a young 20 year old.
So my body may not work as well as it did, but my mind is still very active.
Oh! And I'm barking mad too. That really helps out.
Is there any other way?
I guess you young'uns just have to do things differently just to prove something or other to yourselves...
EDIT: Joking apart, seeing how Beth went to all the trouble to get PC animations done reasonably well, it just seems churlish, if not down right rude, not to use 3rd person. I can think of many games where I'd never use 3rd person if I had the choice...
