Random Q - enchanting everyday items?
Could I... turn say, a pick-axe into an absolutely badass weapon? Could I improve it in the smith, and enchant the Hell out of it? Or maybe do the same with a spade or shovel or even a butter knife?

Is this kind of thing doable in Skyrim? :)

You definitely can improve pickaxe at smithing station.
As for the other questions, I don't know.

Shovels and butter knives? No, they're just ordinary tools. UESP, the (IMHO) best wiki for TES games, says that the pickaxe can't be tempered, but says NOTHING about whether it can be enchanted, so the possibility is still there. I guess the only way to know for sure is to try.

Pickaxe is definitely enchantable. So are woodcutting axes, I think.

The woodcutter's axe, pickaxe and also knife and fork are weapons and therefore enchantable. A shovel is not a weapon and not enchantable. But you could always create a new weapon with the mesh and textures of a shovel (2 models) in the Creation Kit and maybe also in xEdit.

I have sharpened and enchanted the Pickaxe and Woodaxe.
The Ancient Pickaxe is also enchantable and can be sharpened on the Grindstone.
(I tend to think Tempering for Armour and sharpening for weapons)

Not really, if it can be sharpened or enchanted it is done exactly the same way as regular weapons....
It only becomes complicated if a mod makes it complicated.
Usually a mod simply makes stuff that can't be improved (TEmpered or sharpened) or enchanted changed so they can be. The method usually doesn't change.... unless the mod changes it deliberately.

I usually smith the crap out of my pickaxe. By the time it comes to enchanting the crap out of it, it's usually been replaced by a similarly smithed-up ancient Nordic pickaxe. But yes, if it's a melee weapon (or bow), you can usually smith it up and enchant it - but not all of these not-really-weapons benefit from any of the smithing perks and some of them aren't classified as weapons that would benefit from the associated weapon skill perks.

Makes sense - just though it might be fun to have top level enchanted knife and fork for battle!

I usually enchant my pickaxe with Paralyse and/or Chaos, or Fiery Soul Trap for the latter if I've not gained the others at an early stage.

After all, I'm going to be lugging it around all the time so I might as well make it useful other than bashing rock for ore and the occasional gem.

I don't bother with Wood Axe because I don't bother with Firewood, but I've enchanted it in the past with some fun results.

I'm now thinking about similarly enchanting my Fishing Rod as I read somewhere those can be used as weapons.

EDIT: Done the same to knife and fork in the past, but the pickaxe is far more useful, especially if sharpened up.

Seconded on the wood axe. I used to haul it around alongside the pick, but thing is, any time you come across a woodpile you can cut, there's usually an axe sitting there already. It's not like you're going to randomly run in to a situation where you need to cut firewood in the middle of a cave or out on a lonely road, either. The pick? Yes, always. Haven't really carried my fishing rod around since finishing the fishing questline, though; and yes, you can use it as a weapon. I was using the dwarven one to whip some weaker bandits on the roadside during that quest line, just because they didn't seem worth swapping to an actual weapon.
