There are so many side quests the main quest is there to touch on now and then IMO.
Either way the game is fun.
As to your second question, if you confront Miraak after defeating Alduin he will recognise you as a fellow Dragonborn, and comment on your feat. During Elder Knowledge, in addition, you can get access to the college of Winterhold by Fus-Ro-Dahing Faralda, to show her that you really are Dragonborn, and that you are the boss
I want to avoid spoilers for you, but there is some...semi spoiler information you need. I'll try to stay balanced.
The first few parts of the main quest is based out of whiterun. If you do everything that is based from there, you will start to have random periodic dragon attacks. These can happen where ever you are, including towns and such.
If you don't want said dragon attacks, then delay starting the main quest. But dragon attacks add to the fun, imo, and i always do at least that part of the story quickly.
The next area you go to after whiterun (They'll send you somewhere) is required in order to start one of the DLC questlines. (You just have to go to this new location and have them tell you where to go next. You don;t actually have to finish the assignment the second group gives you) Anyway, if you do not advance the main quest at least to that point, you cannot start that particular DLC.
That is the only quest that requires the main quest and only up till that point. I typically do up to that point (maybe 1 or two main quests further for a reward) and then save the rest of the main quest until i've finished everything else i plan to do.

My last character did up until the grey beards summoning, after that he was unsure if he wanted the responsability of being a dragon born
But as he roamed the land, he witnessed the consequences of doing that, villagers dead by dragon attacks, people losing everything to them, so now, after years of devoting himself to learning magic and secret knowledge, he is kind of stepping into the middle

Well I mean, it affects some dialogue options and also you can tell the mage at the entrance of The collage of Winterhold that your dragonbron and you'll be let through. So I wanted to know if it did that anywhere else.
But most quests are untouched by the main quest.
Then I put it on hold and it's generally one of the last things I finish.
You don't actually have to join the college, you can just go to Septimus' "outpost" from the start.
Some dialogue does, yes. But none that I can think of that would actually change quest dualogue outcomes, other than the College. And I believe that dialogue choice will only come up if your Speech ability is high enough. I've only had it come up when I put off entering the College until much later in the game. Other times, it wasn't available as an option.
