Should I install unofficial patch if I already have Anniversary Edition?
I was playing with the Base Edition, then installed the AE, then I saw no changes after almost 2 hours, maybe I need to try new things (level 12 and thane in 2 cities). I think a need to begin a new game, BUT before that I wan't to know IF I should install unofficial patch or not, what are the PROS and CONS? I want to read your opinions

You should consider I'm new in this game, just like 50 hours in two characters just to try different things at the beginning

There isn't really any cons. It only correct things the game breaks, that's all.

AE is only DLC, is that right? No patches?

yes

I should mention it is a required mod for many popular mods.

Edit: I was talking about the Unofficial Patch here.

An expansion on what DPMR stated, there are several new mod packs or complete overhaul installers (Nolvus, Wabbajack, Nexus Mod Collections) that requires the AE DLC be installed. This is mainly due to their dependency on some resources that are added (i.e., armors, weapons, backpacks, quest characters, etc.).

You mention you had SE and now added AE to it with no difference. Which is basically correct, there isn’t much difference.
The difference is first added with you playing over at the start of the game, here it would teach you the difference by added quest and items.
Along with added quest you can sign on to a Bethesda account and download many items.
So the difference isn’t in looks, but game play.

I see the game recognizeds the mods, like the bacpack and new armors, but I don't see it listed in any store and can't craft it yet (but not listed in the forge), so as you say, I should advance more in the game to access all the new content I think

Most of the new content has to be downloaded from Bethesda's site, it doesn't come in the DLC download.
