So display tweaks should do what you want. Im sure other mods have same functionality given mountain of bug fix mods and overlap of fixes.
I play on one monitor too, but the cursor not being locked down did give me an issue once. I kept accidentally selecting the 'unlock' option in Mod Organizer while I was playing, and often this would lead to me accidentally moving mods around randomly in my load order, forcing me to abandon playthroughs multiple times. Now, I quickly minimize Mod Organizer to prevent this from happening. Yes, apparently your cursor is still active and works fine, even if you have Skyrim open through Mod Organizer. I've even accidentally opened my start menu while playing Skyrim in the past. Seriously.
