Sometimes i like to buy ore and ingots to build hauses and craft stuff, then they have some money again ^^
And your question has been asked before by other non-mod users. And there are interesting vanilla exploits you can leverage.

For a permanent fix, if you are on PC, then try the Merchant Gold Upgrade[www.nexusmods.com] mod thats ups the merchant gold limit to a whopping 200,000 gold!

If you have a lot of money, you can repeatedly buy/sell a high value item to level Speech fast. Even if the transaction is for 0 Gold, you still earn XP.
Buy stuff you need from merchants before selling, like Ingots from blacksmiths, Soul Gems from court wizards.
The merchant in the first settlement on Solstheim has a lot of gold right off the bat too.
1. Invest in the Speech skill until you can begin investing in each of the merchants doubling the gold they carry.
2. Use a mod to overhaul the vendors, or one that simply adds gold/removes limits.
3. Use the console and give them more gold. Open the console, select the vendor, and type:
additem f 4000
Any more than that with the base vendor system can cause issues.
The choice is yours.
Honestly, the easy fix to this is don't pick up as much junk. 99% of the items in the game are more or less junk, and you won't miss them if you don't grab them.
Besides Soulgems and potions, there really isn't much thats worth picking up after a certain point. Outside of unique quest rewards, about the only thing of note are the few enchants you don't have learned and a handful that are useful to your build that rolled higher than what you can currently make.
I know its hard, but you gotta learn to fight your hoarding instincts in games like this unless you really enjoy fighting the enemy known as Inventory Management. Even with picking up very few items, you will still end up with more gold than you really need.
That said, most vendors in a vanilla game have more than 750 gold, not less. You just need to find the right ones.
NFF also has another nifty feature : it gives Player Additional Storage and Follower Additional Storage, so you can dump all unnecessary loot into those insta-storage boxes (accessible via hotkeys), and decide what to do with them later.
Apparently you don't like the game how it is because you don't like how little gold the vendors have in the non modded version. There is a perk in speech which can increase the gold, but it's still not much. Other than that you'll need to mod if it bothers you too much.
Even in a vanilla game, I did not have lots of troubles to sell my junk.
