Best mods for an NPC playthrough?
As the title suggests; I wanna be a generic background NPC.

The game is meant to be an escapist fantasy, why would you simulate your everyday life?

Anyway, that's actually possible with simple roleplaying. Just act like any NPC would, wake up, do some job activities (fishing, harvesting, smithing, alchemy, or simply stand around dressed as a guard), go home, get yelled at by your wife for being the worst disappointment in her life, eat her "homecooking", go to sleep. Rinse and repeat until a dragon burns down the whole city because there's no Dragonborn to save the day.

There's also Skyrim Unbound Reborn, which allows you to prospone the appearing of dragons. How about Kyne's Token - Voice of the Sky Effect, to prevent animal preditors attacking you or pray fleeing from you (not good for hunting though). Another mod is Jobs for Skyrim, but there are probably more mods that give you an every day life as an NPC.

Become a bard.

I had tons of fun playing with "Become a bard" mod, but it was some yaers ago and I'm not sure if the mod is updated to current version of Skyrim.
There are also many bard themed mods on nexus from most simplistic to quite complex, though I haven't finished my farmer playthrough and so can't recomend any particular one.

"Heljarchen Farm" and "Winstad Mine" are good for being Goldenhills Plantation style medieval businessman or just simply living sustainable life without travelling across all Skyrim to buy groceries.
There is a similar mod with a lumber yard on a lakeside near guardian stones I saw some time ago on youtube, but haven't found the mod yet, you might search for it if you are interested in becoming a lumberman.

Any needs mod, resently a was playing with Survival Mode enabled and some modded tweaks for it.
Before that I used to play with iNeed and Frostfall (and Campfire).

Hunterborn is good.

Really though, any mod which allows for an alternative start (my own preference is Alternate Perspective) along with those that permit one to work an NPC job like Your Market Stall, Simple Hunting Overhaul or Headhunter.

How is a generic NPC different from real-life? Many times I get wanting a specific flavor (even if not for me), but this one I don't understand. Play a game to do what you do day in and day out?

Just very confused on what one gets out of this particular theme.

It is. Installing frostfall+realistic needs and a taxation mod makes the real fun and challenge of the game trying to survive in the hell that is skyrim

There has been moments when a dragon visited a city, like Windhelm. I was short on time and wanted to deliver a mission item quickly before continuing. I just went through the hazards, delivered the quest item and went on my route to Winterhold.

A "just not today"-day ...
