The presets offer two things.

Requirements for brows, hair and makeup. You'll be surprised on how many new ones you find when starting this.

and

A base model to sculpt off of, the following is an example. Presets is created with imperial head then exported and converted to nord in the creation kit then re-imported as a nord with a imperial head. Stuff like this gives endless possible over the standard few slider presets from the base game for each race.

Any good sculpting heeds high poly head. The site is down at current for me but this is the link.

Racemenu, and craft your characters head yourself, is all i can suggest... That will take some (or a lot of) time, but you can create anything that way.
I don't use HPH (High poly head) as i don't think it's needed, but a lot of people do use it, so it's very much an option for you.

Skin, makeup, overlays, hair's etc.. are all going to help and make (or break) a character.
I like "Reverie" for my characters skin. It's the best looking one i've found, but your lighting mods and ambience will also affect how a character looks.

Complicated? Sure, but anything worth doing usually is.

This.
My last play trough was with an albino orc, so for something completely different, i spent the last five hours starting on a child sized doll like the one my granny had tucked away in her closet, and it looked seriously good in certain lights, but of course not so much in others ...

so back to the drawing board :)

So vanilla is very limited to say the least in terms of variety, but you don't want to use presets because you want to create a character that looks similar to you by yourself, but at the same time mods that allow you to do so are too complicated and have too much of variety to tickle with...
ok
