Erandur would only have counted AFTER the quest.
And of course the horse never counted, because it's not a friend it's a mount... Meeko would work, not sure about other animals.
And this is what I read about animals in a list of acceptable sacrifices to the Ebony Blade: “Animal companions, including owned horses and Meeko from Meeko's Shack.”
Never put anything you want to keep on a weapon rack. Even if it doesn't just outright disappear, it can have the enchantments stripped off of it. Weapon and armor racks do not work properly. The armor racks aren't as bad as the weapon racks. All they do is sometimes move around and can also duplicate the armor you put on them.
While they may or may not be more buggy than the default homes, the issues with weapon racks and armor racks effect all of them, including the ones in the homes that came with the base game.

Get NFF mod and some Horse management mod (even simple mod like Simplest Horses, or Horse Whistle). NFF adds hotkeyable player additional storage and follower additional storage, and those horse mods add horse inventory. Boom, you got free extra storage, wherever you go, and you no longer have to be overencumbered again.
Better yet, get the Bag of Trash mod, or Portable Mimic Item Recycler mod. They'll allow to instantly sell off or recycle the junk loot.
With the above mods, my main inventory has only my outfit, primary weapons and quest objects, nothing else.
I know some people don't like followers or pets in this game, but the follower or pet can serve as a tank and distraction, while you try out some interesting new spell or weapon.
e.g., try the Arachnomany mod, which overhauls the spider scrolls system that most players don't know about or have forgotten. Nothing more fun then throwing out explosive spider mines and meteor storms (Apocalypse mod) at unsuspecting enemies who are distracted by your follower and pet!
