Also, regardless of whether you use MO2 or Vortex, it is the same two text files at the same location.
C:\Users\[PC Name]\AppData\Local\Skyrim Special Edition
1. loadorder.txt (lists all mods in order, even the inactive ones).
2. plugins.txt (lists only the active plugins).
As for the issues you are experiencing, lets take a look at them one at a time.
Save Corruption Bug
1. Check Your Load Order:
Ensure that your load order is well-organized. Sometimes, a messy load order can lead to issues. If you’re using Vortex, it should sort plugins with LOOT automatically.
If you suspect any conflicting mods, consider adjusting their order or disabling them temporarily to see if the issue persists.
2. Update “SSE Engine Fixes”:
Make sure you have the latest version of “SSE Engine Fixes” installed. This mod aims to address various engine-related issues, including save corruption.
If you already have it installed, try reinstalling it or checking for any updates.
Modify “SaveGameMaxSize” Setting:
Navigate to your SKSE folder and locate the “EngineFixes.toml” file.
Change the setting for “SaveGameMaxSize” to “true.” This adjustment might help prevent save corruption2.
3. Avoid Deleting All Saves for a Character:
Sometimes, deleting all saves for one character through the in-game load menu can cause issues. If you encounter the error message, close and restart the game. To prevent this in the future, delete saves from the main menu instead.
Area Load Issues
There are a few items that jump out at me. One of these is that you are using quite a few Mihail's 'Monsters and Animals' mods. While they are very good mods, the author tend's to over do the spawn locations making it difficult to load all assets in an area and can lead to crashes.
There are a couple of mods that you are using that conflict with each other. These are:
1. 'NAT.ENB III' - Weather and 'Vivid Weathers.'
You are using a mod that has a better replacement:
1. 'Dynamic Animation Replacer' replace with 'Open Animation Replacer.' OAR is better supported and is backwards compatible with mods that require DAR, but DAR cannot run OAR mods.
You have quite a few mods that alter cities, towns, settlements, and strongholds as well as adding some new locations. Depending on your PC specs, this can be taxing on loading into zones. You may want to review these to see if they are needed.
Load issues with different zones may be an issue with DynDOLOD. Someone with more experience will have to comment on this.

Are you also running LOOT through MO2?
Also, are your mods installed manually (in the skyrim folder) or are they installed through MO2?
To fix the plugin disable issue, check to make sure you have made the necessary edits to the SSE Engine Fixes TOML.
