Which mod manager do you use?
If some people cannot do the most simple of things and your mods break its on you.
Bethesda will not stop updating the game, they don't care about your mods or you, learn to deal with it.
Guess we will see the same people crying when they do this to Fallout 4.
Bethesda and EA are struggling to continue milking these games for more and more cash. To do that, they have to periodically add new content.
My advice is only use mods by modders, who are responsive to the updates. The updates and roadmaps are published, so modders can stay on top of that, if they choose to.
I checked and auto-updates cannot be turned off for this game.
I don't give a ♥♥♥♥ about the updates, however, your emotionally abusive post presumes that auto-updates can be turned off. I just looked in the properties and could not see that they can be disabled. Perhaps there is some way to do so without using the choices given to us in Steam by the company?
Maybe, instead of belittling people, you could share with them how to turn-off the auto-updates.

Here's the steps to mark your game as 'read only' to stop updates:
go into "C:\Program Files (x86)\Steam\steamapps" look for a file called "appmanifest_489830.acf". Right-click it and put a check-mark in the box that says "Read Only" then click OK.
That's it. Never will your game update again without your explicit consent.
Should you choose to update at a later stage, simply remove the Read Only option and it will update again.
