Issue trying to roll back skyrim
I'm following the instructions in this video:

And I'm having issues with the depot downloads, I managed to download one, but the other tow just aren't downloading. I keep getting errors like crazy, this is oen of them and they all pretty much say the same thing:

depot download failed : error writing chunk for X

Why do you want to downgrade, actually? There's no reason to downgrade anymore, most mods were updated.

The first one is your Skyrim game, the second one is the Creation Kit.

For the Game and the CK:
Now open your Skyrim installation folder and delete everything inside of it, and go to the app_489830 folder previously mentioned; there will be 3 folders inside (depot_489831, depot_489832, and depot_489833), and inside each folder there will be game files. Copy each of the contents to where your Skyrim folder is at (it should be empty before you do this).
Do the same with CK if you're interested in having it. Now go to C:\ProgramFiles\Steam\Steamapps\ and find the appmanifest_489830.acf file, right click on it and click on priorities and set it to read only.
Done.

For the CK ONLY: if you like me manage not to update your Game but forgot about the CK.
Open your Skyrim installation folder and go to the app_1946180 folder previously mentioned; there will be 2 folders inside (depot_1946182, depot_1946183). If you like me only need to revert to the old CK just copy what is in the depots folders to you Skyrim installation folder and press yes when prompted. Upon opening your CK you may or may not get a message saying the CK need to unpack the script files, answer Yes.
If it's not yet done go to C:\ProgramFiles\Steam\Steamapps\ and find the appmanifest_489830.acf file, right click on it and click on priorities and set it to read only.

You're now in 1.6.640 and the game will never update.

I tested this method with the CK and it's working like a charm

Figured out tiw as because I didn't have enough disk space.

And its easier to just downgrade then have to go through and update all my mods
