Here is how to downgrade back to 1.6.640 without using patchers
1. Open the run dialogue with the windows key + R, then type in steam://nav/console. This will open steam with the console window open.

2. Type in the console:

download_depot 489830 489831 3660787314279169352
download_depot 489830 489832 2756691988703496654
download_depot 489830 489833 5291801952219815735

This will download the previous version of the executable, and the console will tell you where it was downloaded to.

3. go to that directory, copy it from there, and paste it into your game's directory, replacing the old one with it.

Doesn't work for me. I get the error "SkyrimSE.exe - Entry Point Not Found - The procedure entry point SteamUserStats could not be located in the dynamic link library (game directory)"

I just backed up my entire game install and saves before updating. Couldn't i just delete and replace the new files with my older version, or it's gonna keep up pestering me about updating?
ok that link I posted above gives you steam console commands to download 3 sets of files let them download mine took a few minutes and then combine all these files and throw them into your Skyrim folder and bam I got it to work. it wasn't enough to just replace the Skyrim exe

dont forget to always run through skse

I had Skyrim uninstalled so I had to do the above steps with a clean install and SKSE is saying my version of Skyrim is out of date and not compatible. Is there anywhere I can download old versions of SKSE?

Edit: Nevermind I found it but now I got a new problem, this method cuts off Bethesda.net meaning I can't get access to any of my anniversary edition content without updating
