Steam thinks SkyrimSE is 1.6.353, which SKSE64 do I use?

The Reddit world thinks the latest version of Skyrim SE (AE update?) is 1.6.640. Steam says my game is up to date with 1.6.353. The SKSE website doesn't list 1.6.353 as viable option, it only lists 1.6.640, 1.5.97. What do I use???

Edit: Yes, my Skyrim SE update mode is set to always automatically update the game in Steam.

Ok... but this is almost a year old. I've found more recent Reddit posts that say all the mods are mostly updated to 1.6.640. But I don't have that version...
