You could also go the Smithing route. You'll want to hit Halted Stream camo first, mine all the Iron, grab the Transmute Ore spell book on the table, and grab a Mammoth Tusk while your as for some free speech xp. There are a few other Mines worth visiting, Kolskeggr Mine for sure if you can handle a few Forsworn, you get gold for clearing them out as well. Karthwasten, and Iron-Breaker Mine.
With with the Transmute spell, you can turn Iron and Silver Ore into gold, due so until all your ore if gold, turn those into ingots and then into jewlery. Make the most profitable options, which will be rings unless you have gems on you as well, which you might have gotten while mining.
You could also just pickpocket everything, that gets you rich quick once your good at it, which to be honest doesn't take that long, but there is always a chance of getting caught and losing everything you stole, unless you're in a Thieves guild influenced city.
Plus like an above said getting the transmute ore spell from that camp lets you turn excess iron ore into more valuable silver/gold which in turn can be turned to jewelry.
