The claim they leave you alone if you leave them alone may work with the lore, but in the game they attack you on sight, even if you are outside their lands....
They will respawn, and mammoth cheese is not particularly useful....
As I say, there is no reason not to attack them, once you get strong enough to survive a fight with them.
They must have pretty bad frostbite if they only have one toe....

It allows you scold giants into leaving after you defeated them in combat (got their health low enough to enter the bleed out animation) and complete the bounty that way. It generally works, although not 100% of the time.
Also applies for bandit bosses, allows them to surrender and gives you the option to turn them in to any guard (who will take them to jail). You still need to speak to whoever issued the bounty to complete the quest).
But no, I have no problem with botching them. Giants are cruel, and stinky o.o

OPs question seems strange to me because I don't think I've ever killed a giant in my playthroughs except one with the Companions. It's just pointless lol. Even if I want their loot I just grab and run. So I don't understand how is it a problem to not kill giants
I have been outside their lands, and they have attacked me... possibly because they were out of place from killing something else. I would go as far as to say in my unmodded game it's rarer for them to respect their own boundaries than it for them not to attack me.
I will admit occasionally they behave as they should.... but it's a blue mood situation.
You attack me, you die.
You don't attack me, I'll leave you alone.
