EVG Animated Traversal does not work with FNIS. You will need Nemesis. Also, the EVGAT forum has some information regarding the latest Skyrim update (v1.6.1130).
You're using both AI Overhaul and Immersive Citizens - AI Overhaul. These will conflict with each other.
Also, using the Load Order Optimization Tool (LOOT) can provide useful information as to potential issues. You would use the summary at the top and look for errors, as well as scan the mods listed for any missing patches.

there's a problem with one of UI elements (as the instructions shows it). I would suspect this mod: "Wider MCM Menu for SkyUI". you have to untick all UI mods and see if it works properly by using vanilla ones. Then add SkyUI + difficulty persistence fix. Test it. Then Rinse and Repeat, casually adding UI mods.
