Is related to that what you want. With which game would we compare?
The main story is a litte bit lame yes. But for me, it´s not that important. There are a lot of interestings quests, almost nothing "get 10 plants" or something like that. A lot ot them will lead you to other locations, dungeons and cities so, you have a good reason to discover new, interesting places.
And a special theme: The dragons. I can´t remember any RPG that bring that powerful creatures and you - as a dragonborn - more epic that Skyrim.
It´s not a telling like "The Witcher 3" or big sequences like in Diablos 3 + 4.
But I almost never get bored with Skyrim. I playing it right now. But I only recommend it with a few mods.

You should try out Enderal if the story is important to you, it's a Skyrim mod (you can download it as a seperate game from steam tho and most mods for Skyrim will also work there) and is doing a much better job in story telling. In fact, Enderal does almost everything except for the sandbox part better than Skyrim which is kinda crazy given that it's a free fan made project.
The WItcher is more linear and obvious I´d say.
It´s a complete new game, based on the Skyrim-engine. And it has a very good, deep story :D
Many quests follow the same trope of doing something and forcing something to happen for cheap shock value, and then patting itself on the back for thinking it's clever.
As an example of Bethesda's writing style: There can be one NPC who hates you during a quest line. They will continue to dislike you, up until a certain point, where they suddenly like you out of the blue and want to be friends with you now! The problem with them liking you now (for no reason, and out of the blue) is that you were now tasked with now having to kill that NPC.
This is extremely forced. It's done for no reason than to "shock" the player and it's done in a cheap, artificial way.
A better way to do this kind of writing would be to have the NPC gradually open up to you and become more likable over the questline progression, not suddenly like you and be sociable right after when a specific flag is triggered, in a cheap and forced attempt to make you try and feel bad or conflicted with your choice.
Bethesda's writing has been filled with "shock" moments like these ever since Oblivion. Skyrim is full of it. Fallout 3 and 4 are filled with it. Starfield is equally fill—well actually Starfield's kind of empty. Nevermind.
Some mods for Skyrim have fantastic writing though if that's more of your cup of tea. Some of them are genuinely great, will have real shock value to them that are not nearly as forced, and can last for several hours. Some of them even make you suffer the consequences of your actions where your choices can genuinely matter.
Have never played a game which did touch me so emotionally as Enderal did to be honest :D
Though I had no problem with the story (though the guilds are pretty bad for the most part story wise), story isn't really why you play these games.
This is a very accurate depiction of Bethesda writing. Emil is a one trick pony hack who's been repeating his oblivion dark brotherhood trope for almost 2 decades because people praised it back then.
They did well with creating all the lore and such that makes up TES but the actual storylines leave a lot to be desired.
One of the biggest gripes concerning the main story of Skyrim is that it rushes you through it. It’s one “OMGZ THIS NEEDS TO BE DONE NOWWWWWWWWW” quest after another and doesn’t leave a lot of room for exploration and taking on of other quests in a way that feels organic. Nothing stops you from walking away from a main story quest and pissing around for 75 hours, but nothing changes - as if you just put the story/characters/events in stasis.
This is why I usually either engage with and run through the main story first and ignore everything else until afterwards, or using a mod like Live Another Life, I do whatever I want to in the world and just stay away from Helgen or don’t select the dialogue prompt for innkeepers which starts the main quest until I’m ready to do it start-to-finish.
