Item's value does affect the skill increase of Alchemy and Smithing so use potions(Smithing only) and enchanted crafting gear if you want to level them up rapidly.

It is still best to use the highest value enchant you have so you can sell the item for the most but otherwise it does not matter.
Admittedly towards the end the difference between a Grand Soul and Common Soul reduces, but the difference is still there.
The item enchanted makes no difference though.
The first part of what I posted came from UESP, and they are usually right, and I don't see a difference myself between petty and grand, beyond value and strength the xp is the same.
Enchanting skill does increase based on the value of the item, but this is only in regards to DISENCHANTING.
Disenchanting a master robe can take you from 15 to like 28 in one disenchant lol.
When making new esp files for mods which require more effort than simply opening and re-saving in CreationKit 64, I raised the prices of certain jewelry pieces specifically to speed the process of leveling up crafting at the start of a new playthrough (since New Game Plus isn't a thing in BGS titles).
Just a few SPG armor condoms or 'thing rings' can get a character up to Glass/Orcish crafting tiers within the space of a minute of two.
Alas, there does not seem to be a way to speed the process of leveling Enchanting when re-playing save for adding a bag of expensive enchanted items into the world somewhere and even then, that only works once for each enchantment.
You could just use console to max out crafting skills in Helgen and decide that your character was already good at crafting before the game began. No need to change prices and add expensive items into game world? It's just a cumbersome way to cheat.
