Any items to collect?
I make soft of absolute playthrough, so, I ask you to give me some ideas what should I do besides listed below:

All magic
All magic tomes
All locations
All armor sets
All clothing sets
Fully upgraded house
Masks
All types and sizes of potions
All scrolls
All weapons
All jewelry
All arrows and bolts
All different types of robes
All crossbows
All books
Achievement for Thieves Guild

Etc, etc, etc.

Any ideas?

Crown of Barenziah, most useless hard to get item in the game.

I will let know right now that at least one of these is going to be impossible. The Vampire side to Dawngaurd has unique jewelry, as does Dawnguard with the Crossbows. Since you have to join one of the factions it will be impossible to do the Crossbows or the Jewelry in one play-through.

Preferably on a stick. Like an iguana-on-a-stick, in case some want to cook him, roast him, fry him., dip him in hot chocolate and caramel.

There should be an achievement for this.

You are right,yes,but i can use console.I still thinking about his,so,yeah.

If you have the mod "Legacy Of the Dragonborn' you will have a museum to show off your collection of lots of game items, there are mods that go with this mod to add more collectable stuff to display. better than storing them in a chest and the museum provides a steady source of gold.
This will naturally come with exploring all locations but it's worth mentioning anyway, a lot of people like to collect all the dragon claws. Several modded houses and I think at least one of the CC houses (not 100% sure on this one though) even have displays that are made specifically for the dragon claws.

There are also several various unique miscellaneous items that can be collected, which really have little purpose other than being sold maybe, but have a unique model. For example, the various bugs in a jar of which only 1 exist in the game for a given bug and have no purpose at all.

You cannot uninstall it midplaythrough without borking your game. Read the following for full information concerning removal of mods and how save files works in this regard:
