How do I obtain stronger weapons at level 60?
I've been at level 62 for a good chunk of my current save and was wondering how people online get weapons and armor (with no enchantments) with such high damage and defense ratings. Are they using the smithing potion exploit or are they progressing by legitimate means? For reference my current dragonbone sword deals 71 dmg and my current full daedric armor rating is 545.

how you get to level 60 but not know enchanting

Enchant some clothes with fortify smithing and alchemy. Wear them to make fortify smithing and enchanting potions. Use the smithing potion to increase damage and armor rating. Then use enchanting potions to make your weapons and gear fit your play style.
Or use enchanting potion to make another set of clothes with even better boost to alchemy and smithing. And that enchanting exploit went away long ago.

craft your own armour and weapons.
Improve them at table and grindstone.
Enchant them, because armour does nothing against magic without a suitable enchantment, and weapons do better with selected enchantments.

Don't forget weapon enchantments last longer if you improve your destruction skill.

Your set of armour appears to be already capped out at maximum value.

Any more defensive ability would require enchanting.

With the unofficial patch there is no smithing potion exploit and the enchant_alchemy_gear-make_stronger_enchanting_potion loop caps out. So we get to that cap, then make smithing potions and our dragon weapons get to some 500s counting their skills in. Also some two items with magic resist(using same maxed out enchant potion) and elemental damage stops being an issue.
With no exploit abuse those potions can still get over 120% enchant and 250% smithing, plus another ~250% smithing from a full set of properly enchanted smithing gear. It is a chore getting the rare alchemy ingredients in sufficient ammounts though.

but so what. Ebony Warrior still one hits me at 1500 armor and max magic resist and 450hp, had to stealthkill him
