The world was created by Aedra, most of them died in the creation of the world, most of those who didn't die became Aldmer (and possibly Humans depending on which iElder Scrolls creation myths you read).
At no point were there any Dinosaurs, the closest we get are Guars and Cliff Racers, which are Morrowind specific.

This means that Dinosaurs did not exist in The Elder Scrolls. Other creatures in our history (mammoths) and myths/stories (dragons) do exist because they were inspired to be added to a fully fantasy setting that is completely detached from Earth's history. For all we know, Earth doesn't exist in The Elder Scroll's universe.
Since there were no dinosaurs in The Elder Scrolls, nothing in the games can be descended from dinosaurs. Once again, this is not Earth or an alternate timeline of it (like any Fallout game).
So ES history teaches us nothing about Dinos? or may be Dragons killed them thanks.
ES history does not have dinos. Dragons cannot kill something that didn't exist.
This is not Earth so ES cannot teach us about our world.
More like paleobiology teaches us very little about using Dragon Shouts to reanimate ice-breathing lizard-bats. Skyrim is only very loosely based on reality.

Logically i can assume that non carbon lifeforms may be prolific and ours is an anomaly.
Based on humanities knowledge of the known universe being a fraction so small AntMan could never visit there. Expanding universe and all.
Secondly, we have no experience of history other than our own, of course our imagination is Humancentric and earthcentric, anything else is unrealistic until we see other planets and other histories.
