Your question is a little unspecific. However,
-Use or sell Armor/weapons
-"Bent Dwemer Scrap Metal", "Large Decorative Dwemer Strut", "Large Dwemer Plate Metal", "Large Dwemer Strut", "Small Dwemer Plate Metal" and "Solid Dwemer Metal" can be smelted to ingots and used for crafting.
-"Dwemer Scrap Metal" can be used to build Hearthfire Displays.

All random junk items can be sold. IMO it is not worth the effort of carrying most of them.

No, there isn't. For the most part, most of the Dwemer loot, such as cups, pans, utensils, etc are junk items and can be sold to vendors. Same with weapons and armor. Or, you can display them in your home.

There are some scrap items that you can smelt down to make Dwarven Metal Ingots to then use to either forge Dwarven weapons and armors, or those same ingots can be used to improve your Dwarven gear. You will need the Dwarven Smithing perk to make armors and weapons.

There is one Dwemer item, which is called Dwemer Scrap Metal, that cannot be smelted down. It can be used to make Dwarven displays in your Hearthfire homes.

Now, there is a mod called Ars Metallica that makes Dwemer Scrap Metal smeltable. It also allows you to smelt down armors and weapons.

apart from the stuff you can smelt, which you probably don't need that much of, its mostly heavy junk.
when I loot their ruins, all I want are the soul gems, oil (alchemy), and the valuable or useful odds and ends (jewels/bling/enchanted items/potions/etc). All that other crap can sit there unless you have a purpose (there are quests for gears and gyros, but the gyros are right next to the giver if you can find them, the gears take a little searching to find 10).
