Edit: I should add that you can not give them adult clothes, only clothes that are marked for child to wear. Default child clothes are pretty much just color variations.
Now that you told me that, it rings a bell. There was a bug with Sofie and her flower baskets, which was never fixed in any official patch.
If it says "too heavy" with Sofie, then this is a vanilla bug that has been fixed in Unofficial Skyrim Sepcial Edition Patch (originally back in Unofficial Heartfire Patch 1.0.3.)
- UESPWiki
- UHFP 1.0.3.
Now patch will fix this, but I am unsure if it is able to do this retroactively. There is a script in place that will slowly remove her excess baskets, but if these script states do not update post adoption, then you might need to load a save prior of adopting her.

really scared to download stuff. I managed with the game by steam and it was scary.
Problems with modding arise, when you have to fight with compatibility issues between them.
I would recommend USSEP and SSE Engine fixes for all players, even if they want to play as close to vanilla than possible.
I have found other console commands, but have never used them, so do a search and try them out.
I still recommend installing USSEP. There are other bugs and like this one, some of them will be... yes, I am going to say it... piling up.
