Setownership disable achievements?
Getting annoyed of not being able to sell some items because theyre marked as stolen but I also love achievements so I read that you could use the console command "setownership" to make an item yours but I do not know if this will disable steam achievements.

No it doesn't. Console commands do not, and never have, disable achievements in Skyrim. There is even a console command that will give you all the quest related achievements (though it will also crash the game, so shouldn't be used).

there are npcs in the game that buy stolen items off of you. One of them is in the thieves guild. Other is in collage of winterhold.

Not in SE it doesn't, that's for Fallout 4 only.... probably will apply for Starfield too, but not Skyrim.

I only say it's for FO4 because others have told me that they changed it for that game...

In that case it doesn't happen for any game yet.

I believe console commands did disable achievements in Fallout 3 and New Vegas, at least until you relaunch the game. That was removed for Fallout 4 and Skyrim. (Oblivion doesn't have Steam achievements to disable.)

If you level up the speech skill there is a perk that lets you sell stolen items to any vendor, also there are fences if you join the thieves guild in riften who you can sell to if you dont want to level speech

To quickly level speech, craft or find high value items and sell them (doesn't matter if merchant doesn't have enough gold, sell anyway) and itll level it up fast. There is also an exploit to enchant the most broken overpowered gear which you can use to make something worth like 250k gold and selling that will max out your speech like instantly.

For the most experience, also make sure to only buy/sell single items at a time. If you sell a whole stack, you only get experience based on the value of a single item. So sell/buy individually.

This is not true. I have used it from time to time and am still getting achievements. The reason for that warning being shown when you open the console window is because of its ability to break quest scripting, of which may not granting you an achievement, despite having completed a specific quest. If you use it correctly, then there are no issues with that.

The Oblivion Walker achievement is one of the most "sensible" achievement that may not trigger after inproper use of console commands on elements that are involved in daedric quests.

This has always annoyed me! Walking into a town loaded with stolen items and nobody cares, until you want to sell. The merchant knows exactly what you have stolen as if they were there when you stole the items. That's why I created a small mod for it:
