Then why does my character in skyrim keep getting turned into a vampire without being infected?

You mean the Serana Dialogue Add-On?
I mean sure she's misunderstood in the Hero Story and if you meet certain conditions, she can become human and put her past behind her.
Other than that, I didn't see an Active Effect for Signature Vampirus but Serana's Charm instead And she had Blood Potions on hand.
Yeah but sometimes, I get a message that Serana drank a Blood Potion and in battle the screen flashed purple and I was turned into a vampire directly by accident, no infection & no 3 day incubation countdown
So I tried taking her Blood Potions from her inventory when I examined her equipment as a follower.

As a result of her Blood Potions, that's 4 counts of Friendly Fire in Dawnguard's Hero Story.
Assuming you have no mods, this is probably because the Dawnguard add-on and especially being around Serana causes buggy vampirism. See the Bugs section here:

So, that explains why the screen flashes magenta at random then flashes red without feeding. So that's when she's a vampire? It doesn't happen when she's human in my last 2 games I played earlier and that was after completing the Dawnguard Hero Story
Mods done properly won't make the game any less stable than vanilla, if they don't actually make it more stable. Bug fix mods in particular are going to help...
Obviously slapping 100 extra lands and multiple frameworks, 8k textures, and physics on everything from helmets to boots is going to tank your performance whatever system your on, but if your intelligent about it you can build a stable game with hundreds of mods active...

OP, you can get vampirism from multiple sources. Most common is ofcourse life drain from an NPC, but you can also get it from Harkon/Serana through dialogue options (you'll know it if you've picked that option)
If your running mods, they can change that, and you can get it through blood potions etc..
it might be a good idea to list the mods your using, given your using SDA, it stands to reason your using others too? Perhaps it's a conflict, wrong version, or just a glitch.
People can only speculate as to where your mystery infection keeps coming from, but they won't be able to help you any further without that.
I'll add that how you add those properly done mods also makes a difference because a load order made up of all properly done mods is no guarantee your game will run as stable or at all. Matter of fact sometimes you can add lesser quality mods and your game will run great. The key is in how you build your load order much like a great cut of meat can be ruined by the person cooking it and a poorer quality can be prepared and cooked to be a very tasty meal.
