Respawn on the mannequin? Yeah, known bug. Armor mannequins have issues. They have also been known to strip enchantments off items, and to come alive at times (they are simply static NPCs as far as the game is concerned).
also what's funny is that i fought 2 Revered Dragons, both times after i took and sold the duplicated Chitin and Bonemold armor. but the third time i didn't remove them from the mannequins and there was no 3rd dragon lol.
As far as I know, that isn't one of the things the mannequins can do if they bug out. Weapon racks, on the other hand, can removing tempering if they glitch.

"1) Put 2 of each item that you have been duping into the mannequin's inventory, nothing else. Also, make sure you don't have any more than 4 of each in your own inventory.
2) Leave and re-enter, making sure that when you leave the house, the loading screen shows an image instead of just a black, smoky screen. This ensures that the house (im)properly reloads.
3) Activate the mannequin, and remove one of each item from it's inventory. Without exiting the menu, go to your items and put each one back. WARNING: If you have 6 or more items in your own inventory at this time, it will ask you how many you want to place, and this will cause failure. This is why you can't have more than 4 to begin with.
4) Leave and re-enter, again, making sure that the loading screen shows an image when you leave. NOTE: This is why I like the Riften house, as it's easy to remember which door you went through last, and you can just use the other one.
5) Activate the mannequin, and remove all the items from it's inventory, leaving it naked.
6) Leave and re-enter one last time. Again, be sure it reloads the right way. When you go to your mannequin it should still be naked, and will have stopped duping items."
Ever since I figured out what causes the glitch I've made sure to avoid triggering it, so I've never used the above instructions I posted. So I give no guarantees of it working out.
It does not tho. Most of the time it is fixed but some items still get duplicated randomly.
Occassionally, especially in CC homes, a mannikin will lock onto a specific item (or even a set), and after a period the mannikin resets to that item, unequipping the item that was there.... I've not lost anything to this bug yet, but once I discover it I remove the unequipped items....
The weapons Placques on the walls are even worse, they can cause the weapon stored there to raise up and eventually disappear through the ceiling... where you lose them permanently....
Luckily we have a few mods to move items and "freeze" them in place.
As for the manikins, they are more creepy than most things in the game.
1) Never use mannequins to store duplicates. Only equip on them one copy of an item for every slot.
2) Don't equip shields on them.
3) Do an equipping session with a single motion. Don't do like that: open mannequin, put some item there, remove that item, put some other item instead. Do like that: enter the house, open mannequin, put a set of items there, close mannequin, leave the house. One consecutive motion without any second thoughts on the way.
4) Don't equip unique items coz you may lose them.
5) Same rule is for the weapon plaques. Only place weapon there which you don't bother to lose.
I personally think it may be because the Mannikins were created by using an NPC template and making it stationary, not the best way to create a mannikin in my opinion.
