Camping+Frostfall vs Sunhelm?
In the past I've had issues with FrostFall forcing me to build campfires every few hundred meters to avoid freezing to death. Perhaps I just didn't know enough about what I was doing. Coming back to Skyrim and wondering about Sunhelm. What mods are recommended to bring it up to being competitive. I have used Sunhelm a little and I could never get the cold to be an issue - at Riverwood at night I stripped down to my loincloth and with snow on the ground close to the White River I went fishing in the river for a while and there was no indication of cold.

There's a mod called "harsher cold for SunHelm" or something like that which goes a long way to making SunHelm competitive with FrostFall in the cold department. Then use the SunHelm MCM to bump up the Cold penalties. Its' still a bit more forgiving compared to Frostfall + Wet and Cold, but if that's not enough you can stick with Frost Fall + Wet and Cold and Camping.

Also if you are not getting cold indicators -- make sure you turn SunHelm on first. It is disabled when you first install it. You have to go into the SunHelm MCM in game and turn it on first.
