Should i return to Legendary Edition?
I'm gonna play Skyrim again, and obviously with mods. However we all know that Bethesda has been updating the Anniversary Edition randomly, which has already broken 2 of my modded saves. Am i just better off sticking to Legendary Edition as they might just update Anniversary Edition again in the future and ruin my mods?

You could do the following:

-set steam to update game only at launch
-have you base game version stored somewhere, so you can recover it at any moment
-have all the mods you use stored somewhere, so you can recover them at any moment

Then you can run any version of Skyrim you want and can never be screwed by updates (in the worst case you just recover your game+mods and keep going).

Pretty sure either of the popular mod managers can do all of that.
Set your steam updates to "Only update when I launch it" and avoid launching Skyrim from Steam, use a mod manager like vortex or Mod organizer 2 (My favorite is MO2). Always keep a backup of your SkyrimSE.exe in case you accidentally update your game and you should be fine.

The Important thing you forgot to mention as that you must start the game from SKSE while STEAM IS ALREADY RUNNING. If steam is not open it will open the default launcher and try to update you game.

That being said LE is the lesser version of the game, load times are longer, it looks a little worse by default has a lower mod limit and a memory limit which can cause crashing under heavy load or long play times.

Special Edition suffers from none of these issues. I would never go back to Oldrim.

To be fair, that would only happen if the game receives a new update and (I think it is the manifest file) would know that it should update.

If you, for example, change the game version after installing it via Steam, the steam will not notice and will not try to update unless you verify files or a new update comes.

If done correctly, updates can be avoided for as long as you want them to. For at least the last 5 years of updates, I have never once had the game update until I was ready to.

Going back to LE is not a good move. It's inferior to SE in a number of ways.

The current version (1.6.640) IS SSE. No one should be downgrading or recommending downgrading to earlier versions.

You can start again and prevent updates to the game client? there are various ways to achieve it. the only requirement is having a SKSE - of which is the main reason why people don't want to update their Skyrim SE game.

Going back to Legendary edition is an option but be aware of differences. The capability of that engine is much limited towards this SE one; fewer advanced graphic options, strict memory management (32bit vs 64bit, LE may require memory patches), fewer plugins (no ESL support) to be added, limited mod capabilities, ... basically a step back.

Legendary is a safer bet imo, I'm still struggling to get a good modlist that doesn't insta snap the moment i do something intensive in-game on Anniversary Edition. One of the biggest examples of highly dysfunctional is the "Immersive & Adult" collection.

Either that or, It has some special instructions somewhere not written down as to load order.

se is significantly more stable and a lot of mod authors have either already abandoned or are starting to abandon porting their mods to oldrim
there are several ways you can stop steam from updating such as telling the game to only update when launched while you're running the game through skse, or make the app manifest file read only, or, despite what people constantly shilling their guides as if they're the only people on the planet that know how to mod the game say, downgrade

Most important advice is to completely back up your folder. Because you will mess up eventually.............. it happens to all of us.
