Why do mods not automatically sort dependencies?
Like, it's 2022 they should automatically sort to the most stable configuration.

Because you havn't released the code to make it happen yet. Hurry up and write the program.
Use Vortex, it auto sorts everything every time you deploy your mods.

because I like ctd's when starting the game and hours investigating what I'm missing or why it won't run ... in short the joys of modding a game.

It sorts load order but not dependency conflicts.

No, it shouldn´t. Automation means you have no control over what gets priority in your game. That´s a big problem for people with large mod configs. And LOOT isn´t truly automatic either. It depends on a masterlist to sort out dependencies and priorities.

There has been multiple attempts and since there's no tool at this day shows that it's not a simple thing to accomplish. The most closest one got is LOOT, of which relies on a (by human) curated master list.

I myself don't use LOOT to sort the mods. It is not precise as I want it to be. Therefore, I do it by hand because I've invested my own time in comprehending the loading process, how record overrides are functioning, what happens with ITM's on multiple mods having touching this entry, ect That's how the people behind LOOT got their master list. It is our own experience that leads to our own mod load order list. Nonetheless, LOOT is still useful for those that aren't familiar with modding or are still at "beginner" level let's say.
