SKSE Error
I updated the files across from the SKSE download page for the AE build, game version 1.6.640, copied to install directory.

But when I tried launching SKSE launcher I got the following error message:

REL/Relocation.h(711): Failed to locate an appropriate address library with the path: Data/SKSE/Plugins/versionlib-1-6-640-0.bin

This means you are missing the address library for this specific version of the game. Please continue to the mod page for address library to download an appropriate version. If one is not available, then it is likely that address library has not yet Yded support for this version of the game.

It was a while since I last played my modded Skyrim so I've got a bit of brain fog trying to work out what is wrong.

The message says it already: you have Address Library mod installed that is not up to date. Check the mod page: https://www.nexusmods.com/skyrimspecialedition/mods/32444 and download the right version.

Cheers. I went into Vortex and updated that, and checked each mod individually. There's a bunch of mods that haven't received any updates tho like Quick Loot RE and Remove Quicksave and Help Buttons.

Is it best to disable these, or should they just work?

Launching SKSE just says EngineFixes.dll, QuicklootRE.dll and Simply knock.dll are incompatible.

In that case, it's best to not update the game and revert to an earlier version. Ensure that the game does not update on itself (check its properties when checking the game in your library) when starting the game. Since you have SKSE you know how to launch through that. This approach prevents the game being updated, thus preserving the mod stability. That will be your first step.

Second step: Use this tool to revert back to an earlier version: https://www.nexusmods.com/skyrimspecialedition/mods/57618

Third step: download an older SKSE plugin (there's an "archive" link for that) that matches with your game version. Don't worry about Address Library, it does not need to be reverted.
