Hunterborn is almost entirely an alchemy mod, doesn't change the actual hunt any and barely changes looting a little bit.
I'm not aware of any quest mods that exclusively add hunting content, either.
If all you want to do is bow hunt in the woods, the game already lets you do that. There are also better games for doing that.
This is just a few that I know of and some that I have worked with in oldrim. Haven't been able to get my perfect mod list for SE yet even following some of the more popular build lists have resulted in CTD on startup for me. Of course you're also going to want to use a flora overhaul of some time to increase ground cover, bigger trees aren't bad either. If you manage to get a nice hunters mod list put together, let me know and if my experimenting works I'll let you know.
