How do you go about using gardens and/or greenhouse? (survey)

How do you guys go about selecting what you plant? What's the optimal garden/greenhouse setup in you opinion?

Personaly, on my first couple of playthrough I ended up with 3 garden and 2 greenhouse. I usualy split the ingredients (and food) according to their yield so that I ended up with roughly the same amount of everything.

Now I'm thinking about skipping the most common food (except maybe leek that seems to be somewhat rarer, I'll see in time). For the other ingredients I think about 1 of each with extra copies for those that have very useful alchemical property that I'm more likely to use and/or possibly valuable ones because I end up with a lot of unused potion anyway.

Edit : I'm also thinking about not putting in the duplicate ingredients some that are extremely easy to gather in large quantities such as glowing mushroom... maybe the mountain flower unless one or more of them seems to be trailing behind the others.

For me I do 1 house with greenhouse and garden for alchemy (if I bother with it..) depending on what type of character (assassins usually go poisons, druid/healers usually go with heal/utility )

And then turn the pale one into a house (bedrooms/kitchen) with food crops

The third I do greenhouse/garden with what ever I feel I need to stock up on
