Note if a bandit catches you trying to give him jewelry you can hit him with a calm spell and it should reset him allowing you to pick his pocket again, this also works for stealth attacks iirc.
I always do fishing and burglary jobs. Unless my pickpocketing is too low, then i do Numbers and Burglary.
Your way earns more money, but since i always play an alchemist and earning money is way to easy as an potion brewer, i never really need these missions for money, as such i prefer to get those heist and bedlam jobs, finish the auto generated quests faster.
The auto generated quests are fun to do once or twice but the handmade quests are infinitely better. I get why they showed off this auto generated quest trick so much in the game since it was pretty new, but i certainly hope that in the next game they either go back to handcrafted quests or that they improved their abilities with these kinds of quests and make them more complex and more story intensive, they get boring fast because they are way to simple and have 0 story associated with them. I just want to get them over with as soon as i can. As such i always quick save the moment i accept a quest, than reload if its not in a city that i want. Anything to make these simple quests be over faster (i play with a mod that disables fast travel, so getting around for all these quests takes longer. going all over the map for every seperate quest is simply not viable for me)
