He must have got stuck on something and dropped to his death when the game regrounded him. Perhaps it was caused by not limiting your FPS to 60, I don't know.
I have also had a similiar issue with the beggar woman in Windhelm falling through a glitchy spot near the Blacksmith area that I myself fell through a few times and received fall damage.

Unless there is a mod reponsible, I have no idea. I don't recall any time that I've ever found someone dead, inside a town, that didn't involve me.

I've played some 200 hours so far at 110Hz and didn't notice NPCs randomly dying. Skyrim SE is vanilla (well, mod-wise) except for the two free creation club mods.
Although I started new game with the high FPS to check if it was okay, I don't remember anything particular in Riverwood -- so that probably means he was there, alive, and carrying wood around (if that's what he does all the time).
In my ongoing save, the guy is there, stump barking happily as well.
This must be triggered by some edge situations (like Heimskrr faithless silent preaching, which is triggered if you arrive on whiterun first time at night).
